If you moved here from New York, New Jersey or Connecticut, you have probably already had the conversation. Somebody asks where to get a decent bagel in Las Vegas, and the answer involves a sigh. That answer keeps getting better, and it got better again this week.

PopUp Bagels, the hot whole bagel brand that turned a Connecticut backyard into roughly fifty shops across eighteen states, opened its first Nevada location on Friday, August 28, 2026. It is at 1685 E. Cactus Avenue, Suite 120, in the far south valley near St. Rose Parkway. The company and the Las Vegas Review-Journal both describe it as Henderson, though the postal address reads Las Vegas, NV 89183. Either way, if you are coming from the west side, budget for the drive.

What is PopUp Bagels?

PopUp Bagels is a bagel shop that does not make bagel sandwiches. That is the whole idea, and it is worth understanding before you walk in, because the menu will confuse you otherwise.

Founder Adam Goldberg started the brand in his Westport, Connecticut backyard in 2021, selling bagels out of his driveway during the pandemic. It grew into a national brand on the back of one trademarked ritual: Grip, Rip and Dip. You get your bagels hot and whole, straight out of the oven, in a paper bag. You tear off a piece with your hands. You dip it into a tub of butter or schmear. Nobody slices anything. Nobody toasts anything.

The company calls itself Not Famous but Known, which is a registered trademark and, honestly, a pretty good description of how it spreads. It shows up, the line forms, and word gets around.

The Las Vegas menu keeps things narrow on purpose. Bagels come in plain, poppy seed, salt, sesame and everything. You buy them by the bag, in threes, sixes, a dozen or thirty, and you can add individual bagels for an extra charge.

The schmears are where it gets interesting. Salted butter, brown sugar cinnamon butter, plain schmear and scallion schmear are always on. Beyond those, the shop runs rotating butters and schmears that change, which is the part that gets regulars to keep checking back. Drinks are coffee, cold brew, juices and iced teas. They do catering and order ahead pickup, which matters if you are feeding a crowd and do not want to stand in the opening month line.

One practical note from my visit, and you can see it in the video: the bagels come out genuinely hot. Not warm. Hot. Give them a minute in the car before you start ripping.

The Nevada shops are being run by local partners Gary Rubenyan and Raffi Babaian of Lucky Bagel, and this is the first of seven locations they have planned across the state. So if the south valley drive is not realistic for you, one is probably coming closer.

Where else to get New York style bagels in Las Vegas

PopUp Bagels is the newest arrival, not the only option, and it is a long way from the west side. If you live in Summerlin or you are house hunting there, these are the ones worth knowing. I have listed the addresses so you can check the drive before you commit to it.

The Bagel Nook, Summerlin

11010 Lavender Hill Dr, Suite 140, Las Vegas, NV 89135. Open 6 a.m. to 5 p.m. daily. A New Jersey import, and the only shop on this list actually inside Summerlin. They boil and bake the traditional way but they are known for the maximalist end of the spectrum, including stuffed and overloaded bagels and flavors that would horrify a Manhattan purist. If you want a classic everything with lox, they will make it. If you want something ridiculous, they will make that too.

Life’s A Bagel

2223 N. Rampart Blvd, Las Vegas, NV 89128. Open 7 a.m. to 5 p.m. daily. Right on the eastern edge of Summerlin near Angel Park, which makes it the most convenient real bagel on this list for most of my Summerlin clients. Fresh daily bakes, hand sliced sandwiches, and a deli case.

The Bagel Cafe

301 N. Buffalo Dr, Las Vegas, NV 89145. The valley institution, and it just marked thirty years. A full New York style deli and bakery rather than a bagel counter, with bagels boiled then baked on the premises, cream cheeses whipped daily, house roasted meats, and a bakery case. This is where you go when you want the whole experience and not just the bagel.

Abel’s Bagels

7150 S. Durango Dr, Suite 130, Las Vegas, NV 89113. Monday to Friday 7 a.m. to 2 p.m., Saturday 7 a.m. to 3 p.m., Sunday 8 a.m. to 3 p.m. Southwest valley, in Spring Valley. Old world method, hand rolled, cold fermented overnight, then boiled and baked in the morning. If your standard is texture rather than novelty, start here.

Why a bagel shop is actually a housing story

Here is the part that is really about my job.

You do not get five credible New York style bagel shops in a desert city by accident. You get them because enough people moved here from the Northeast to support them, and because those people kept asking for something they could not find. PopUp Bagels did not pick Las Vegas because of the Strip. It picked Las Vegas because the transplant population got big enough to carry a brand that lives or dies on East Coast expectations.

That is the same thing I watch from the housing side. The clients I work with who are moving to Las Vegas are mostly coming from California, but a real share come from New York, New Jersey and Chicago, and they arrive with a specific worry: that they are trading their food, their walkability and their neighborhood for square footage and no state income tax. Ten years ago that trade was real. It is much less real now.

The practical version of this for anyone house hunting: your neighborhood choice determines how much of that daily life you actually get. Summerlin has its own grocery, dining and coffee ecosystem built in, which is why so many out of state buyers land there. The south valley near St. Rose, where PopUp Bagels chose to open, is newer and growing fast for the same reason. Henderson has its own. If proximity to real food matters to you, say so early, because it narrows the map quickly.

Brands built for East Coast expectations, including PopUp Bagels, are expanding into the valley specifically because the customer base is already here.
